Storage Temperatures Necessary to Maintain Cheese Safety
Henning's Wisconsin Cheese is the last cheese factory in the United States that makes the larger wheels of cheese (150 to 12,000 pounds).
We have found that stores like working with the 38 pound flats (round wheels of cheese, the same height as a 40 pound block) and 75 pound wheels, because they are much easier for store personnel to handle.

All of our wheels are custom made to the customer's needs. Cheese is typically clear waxed, but wheels up to 22 pounds can also be red or black waxed.
We have no minimum order, but note that most refrigerated trucks have a 1200 pound minimum weight—so if you order 75 or 1200 pounds, you will be paying freight on 1200 pound.
Henning Cheese gets 4000 pounds of cheese out of a vat. If you are ordering a specialty cheese like Colby Jack for example, and only want 150 pounds, your order will wait until we get enough orders together to make an entire vat. This means that lead times may take as long as a month.
When ordering a 300 pound wheel, for example, it takes 4 days for the cheese to cool down before we can take the forms off.
Once the form comes off, the cheese has to dry an additional 3 days before it can be waxed.
When we make a 1000 pound wheel, the form has to stay on 6 days before it is removed, and an additional 4 days before it can be waxed.

- Peppercorn is only available as a 22 lb. wheel (needs time for aging).
- Cutting wires, labels and casters are available upon request.
- Mammoths are priced on the day they are made, using the previous week's average market plus the overage.
- Lead-time is a minimum 3 weeks on smaller wheels, longer on larger ones.
- Mammoths 300 lbs and larger come on their own individual pallets.
- Henning's Colby Longhorns are made the way the Old Fashion way. They are individually made in tapered hoops with a cloth bandage then slow cured in our specially built drying room. They are waxed and then stored in our controlled temperature cooler to create the look and flavor Colby was meant to have.
